You know one thing this Lady absolutely loves? Banana Muffins! Even as a very young Lady I have loved Banana muffin or Banana bread. My mom tells stories of how I would not allow anyone to eat the Banana’s so they could over ripen and she would bake a piece of heaven for me. Now I think Karma has come back and my spouse leaves me over ripened banana’s and requests my muffins. I seriously have to make a double batch every time or I won’t get any, and they never go to waste! Over the years I believe I have perfected the recipe! Check it out!
1 1/2 cups All Purpose Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Cinnamon
4 Banana’s, Mashed
1/2 cup White Sugar
1 egg, beaten lightly
1/4 cup butter, melted
1/2 cup Apple Sauce
1 tsp Vanilla Extract
- Preheat over to 350. Line muffin pan with muffin cups or grease lightly.
- In a bowl combine first five ingredients set aside
- In a bowl Combine remaining ingredients mix until incorporated.
- Add Banana mixture to Flour mixture until moistened do not over stir! Spoon into muffin cups,
Bake in oven for about 16 minutes or until toothpick comes out clean.
Remember oven times may vary my oven is ridiculously hotter than most so you may have to adjust for that! This recipe can be modified for bread just pour batter into a loaf and adjust cooking times. This recipe also goes well if you add walnuts or even chocolate chips. Other than that enjoy!
