This recipe is a favourite at my house I like it too because if is so quick and easy I can whip if up in about 30 minutes. Perfect for a busy household or on days when your injured foot is angry and you just want to relax and blog. So lets get started!
Spicy Chicken Steam Fry
2 skinless boneless chicken breasts thin sliced
2-3 carrots peeled and thin sliced on a bias
1 sm white onion thin sliced
2 cloves garlic fine minced
1-2 jalapenos thin sliced
1 Tbsp olive oil
1 tsp soy sauce
1 tsp sesame oil
3-4 Tbsp oyster sauce
1 tsp sriracha
1/2 cup chicken stock
1 bag or 400 g of Chinese Steam Fried Noodles or chow mien ( I use a combination of the two for added texture and colour.
Sesame seeds to garnish
Salt and pepper to taste
- Bring 8 cups of lightly salted water to a boil. Reduce heat and add Noodles. Cook for 3-5 minutes or as per pkg drain rinse and set aside.
2. In a large wok over medium high, heat oil. Add chicken cook stirring occasionally for 5 minutes. Add onions, jalapeno, garlic, and carrot. Cook stirring occasionally for 5 minutes or until onions are translucent and chicken is fully cooked. Add soy sauce, sesame oil, oyster sauce, sriracha, and chicken stock. Reduce heat and simmer for 10 minutes stirring occasionally.
3. Add Noodles to chicken mixture stirring frequently until coated and warmed through.
4. Garnish with sesame seeds and serve.

I switch up the vegetables with this all the time, this combination is my favourite but I use whatever is on hand.
